Ochazuke is a traditional Japanese dish that dates back centuries, originally enjoyed as a simple, comforting meal at the end of the day. The name literally means “tea over rice,” with green tea or dashi broth poured over rice and toppings.

It’s often eaten as a light, soothing dish - perfect for resetting the palate - but it can also showcase premium ingredients like salmon and unagi, elevating it into something truly special.

In Japan, ochazuke is also known for its versatility, with each region and chef bringing their own unique twist to the dish.
